Pour 40 g of boiling water over the semolina. Let swell covered.
Wash the tomatoes and cucumber, peel and seed them (if you don't have a tomato peeler, immerse them for 2 minutes in boiling water to loosen the skin more easily).
Cut cucumber and tomatoes into very small pieces.
Rinse and chop the mint leaves.
Fluff the semolina with a fork and mix all the ingredients together.
Chill at least 20 minutes before serving.
